Being 50 percent Chilean, we try and celebrate The Fiestas Patrias or Chilean independence day annually. My family makes Sopaipillas all the time, but I have never actually made them myself. This year I decided for the party that I would make Sopaipillas. I will admit I was nervous on two fronts; cooking with oil and meeting my families expectations. It was a bit different then the ones that I am used to but I think in a good way. It was a more fluffy or the dough rose more than I am used to but I enjoyed the change. In fact it was so good that my mom asked for the recipe, that must be a good sign.
